Deixa-se fritar ligeiramente e junta \u00e1gua e feij\u00e3o previamente cozido. Acrescente as fatias de ab\u00f3bora e couve. Quando levanta fervura junta-se o rol\u00e3o e deixa-se cozer em lume brando (com muito pouca \u00e1gua, at\u00e9 a altura do milho, que \u00e9 cozido quase a vapor). Acrescenta mais uma camada de rol\u00e3o mais fino e deixar mais alguns minutos. Assim que levantar fervura deita-se para dentro o xer\u00e9m e deixa-se cozer em lume brando, preferencialmente de lenha. Depois adiciona o toucinho.
